The point is, if you're organised and know what you're doing, once you've got all the components together building a boat in 2 weeks is easily doable.
Building is possible. If you are using the same tramp, beams, rudders, boards rigging and attachment fittings, only. Should you just have a set of hull molds, sourcing new harware, tramps and developing systems that work and a new layout will eat up a lot of time.
