I came across this website about windsurfing fins and was wondering if this idea could also work on a daggerboard.

The idea is that the camber changes when you tack, making it more efficient and requiring a
smaller size than normally required (maybe a bit like gybing daggerboards but more advanced?).

I had trouble getting the site to load, but it's prolly been done.

The Amateur Yacht Research Society (AYRS) has been around an awfully long time, and someone there has tried everything conceivable. I'd start by looking there, they have a website.

I couldn't load the site either, but as you mentioned the gybing daggerboard, I remember Bethwaite writing that they disturbed the flow over the rudders. So my reasonably uninformed guess would be that they would be OK for surfboard fins where there are no foils behind them but for boats where there's a a rudder behind the daggerboard results could be disappointing...
