The connectors of my rudder arms and tiller cross bar are getting wobbly. Anyone know how to get them apart? They see to be corroded to the tubes.

do you mean where the aluminum tube is set on the carbon/glass black rudder stock? If it is anything like mine then it appears to be glued/epoxied and then riveted to it. is this what you are talking about?
or are you talking about the fitting that attaches the tiller to the crossbar? if this is the case it shouldn't be corroded cause it is plastic to alumimum (if, once again, it is like mine with the black plastic fittings that have the pin that is secured with the little clip). one of mine pulled out last time I went over. easy fix with a new screw and some jbweld (have to be careful not to have the screw go into the threaded part though. the diameter is slightly different and I used al strips from a can to make a "spacer")

No. My problem is where the swiveling parts are attached. I think there may be a nut inside that has backed off and needs to be re-tightened.

if it is on the adjustable side that is not likely the case because there can't be a nut on the inside. As far as the other end that doesn't adjust then it is unlikely there too (how would one install said nut?). If it is on the unadjustable side I would take it out then goober it all up with 5200 and then put it back on and put one or two small sheet metals screws in it. as far as the adjustable side, i already said what I did.

**** over and jamb. It appears that they are just held in with some sort of adhesive—no visible screws or rivets. For now, I've just put a few wraps of electrical tape around each to keep them from rolling over.
