Hey, finally getting back on the forums for the summer...
anyways, i want to clean my sunfish and hobie14 sail. What is the best product to use for this?

Fiberglass gelcoat? Mild staining - water, a little bleach, and some soap. There's another thread with some great grocery store product recommendations too.

For the sail: take it for a swim in the neighbor's pool and let it soak for a little while. Scrub gently if necessary.

so just some detergent mixed with water should take care of most stains/dirt?

It helps to rinse them off with fresh water after each use, let them dry, then bag them.
