I taught windsurfing for years. The most logical approach is to systematically develop the reflexes that will make the boat do what you want.
Know that you're going to drift downwind as you learn, you need a friendly lee shore for this.
Begin by standing on the board and pulling up the sail. Just hold the rope for now. Pull the rope straight to your right, you'll notice that the board turns and you have to shuffle around. Turn the other way. Climb back on the board and be more careful next time.
To start, aim at right angles to the wind and do the cross over move. Aft hand holds the rope and pulls sail to weather past your shoulder. Forward hand crosses over and grabs the boom. Now the aft hand grabs the boom and pulls in.
Steer by tilting the sail forward or aft.
Remember, no rain means no rainbow.
