The problem is that it takes 15 to 30 minutes just to make the first reduction in sail area once the decision is made. The Book "The Race" went in pretty big detail about what almost happened and quoted some of the crew who were standing in the middle of the boat (working on reducing sail) when a 65knot gust hit them. As the rudders came out of the water and the bows went down, they realized that if this boat went over they would have to swim 30' just to reach an edge. They explained that they immediately unclipped the safety harnesses and started sprinting for the sides of the boat. Pretty wild. Playstation (Cheyenne) later had 5' added to the stern and something like 15 or 20' added to the bow length.
