Those polars show straight-line speed, not VMG. Depending on the conditions, it may very well be better to sail higher/deeper to get around the course faster.



VMG is just the projection to the vertical axis on these plots. So the optimum angles are simply the upper and lowermost points .

They are only valid for a given wind speed, agree on that. I bet they change with water conditions too.
