When you say "wired off the transom" do you mean back foot at the back of the hull? Most people sail like this. If your crew is able to they should have their back foot on the rudder case and their front foot actually on the transom. I know it sounds strange but you can do it and it makes a massive difference.

As for T foils etc, sure they can be done but you are better to get the technique perfect before looking at these options.
