You can adjust the angle of the cleat so that it is higher and a pull on the sheet will release. You then have to hold the sheet higher up when sheeting to get it in the cleat. I prefer to have a lower cleat, so it cleats as I sheet in. I then snap the line to release and hold. If it is gusty... I never leave cleated for long.
Also, keep your hand on the sheet at ALL times and with a small tension between you and the cleat. Don't simply grab the sheet somewhere... there could be an amount of slack between you and the cleat that prohibits a quick release.
