Usually do this for Thankgiving and Christmas.

It's really cold outside, over a foot of snow on the ground, etc.

With my special blend of cajun seasoning injected thru out the bird prior to frying- mouth watering good!

You can buy Cajun Injector seasoning up there? Thats good stuff!

Next you need to try one in a Cajun Microwave. Last year I did a turkey and a ham at the same time. You pair that with Jambalaya and green bean casserole... man thats good!!

Makes me want to go home and cook something.

Being from Lafayette, LA. I get a heads up on the new cajun trends from family. I brought back a TurPorky from my Thanksgiving visit to have for Christmas. Turkey stuffed with a pork roast...yumm. Will finish the leftovers tomorrow night!

My mom and wife had to drive 45 minutes out of Lafayette just to get it from the butcher.

the party had GOOD Food !!

I'm from Maryland though, & Like spicy food ; i'm betting

I'm trying to think of what might be the equivalent here in the real "swamp" (everglades).

Maybe Vul-gat-oa? (Turkey buzzard/vulture, alligator, boa constrictor)?

seems the ones they've killed so far have been stuffed with eggs?

I think they said the burmese python typically lay about 100 eggs per "clutch"...

I don't know much about snakes other than they look cool and I don't want one.

I make my OWN cajun seasoning to inject thru out the bird and let it soak several hours before deep frying.
It's mostly cayenne pepper, etc.

And thanks to all for the woderful posts, it also sounds like many had some unique, wonderful meals.

PS- abouut 8 ihnches of snow last night- and it's snowing HEAVY now!
I'm planning to go sledding today with my kids and a few friends.
