That shot was from some earlier test runs on the boat. He has a furled head stay in front of each mast but the boat would only use one at a time on the leeward rig to help airflow over that rig (since it could be partially shadowed by the windward rig). The boat appears thusfar to have a very narrow groove for wind angle and speed but when it's on, it's ON.
With regards to eating, sleeping, and other necessities, I'm pretty sure that for a 24 hour record attempt, Yves does very little without his hand on the tiller and probably wouldn't sleep at all.
