I'm adding a rudder to the 21' Hawaiian outrigger I have finished building to avoid having to paddle steer which while traditional is laborious and none too relaxing. I have a hobie wave which I could see a way to adapt a single rudder to the canoe shaped stern. However the Hobie Wave has over 8.5" between the pintles which would complicate installation. Are there any cat rudders with a shorter span between the pintles?

New style Hobie 18 one piece gudgeons are 7 1/4" high (just measured them on a boat in my front yard).. Note: When fitting Hobie 18 rudder castings to this style of gudgeon a little filing of the rudder casting is required to get them to fit - this is normal and is mentioned in the instructions.
If you're going to use a Hobie rudder, make sure you use the laminated racing rudder instead of the stock molded ones. The molded ones are flexible, I would think for a 21' canoe it might not perform as you would like.
