The technique of pointing your bows to the wind is part of what Rick White calls "power righting", or using the sails to help bring the boat back up. In winds greater than 15 knots or so, I am able to right my N6.0 on my own. (I discovered this on an occasion when my crew made the mistake of letting go of the boat and left me standing on the hull with the wind pushing the capsized boat along at a pace much faster than he could swim.)
