You take the hulls off by removing the bolts on the front and rear crossbars. There are 4 bolts per hull that you have to remove. One inner and outer for the front crossbar and one inner and outer for the rear crossbar. The outer ones you can see from the top, but the inner ones are under the deck lip at the crossbar. You'll need an allan wrench to remove these. You do not have to remove the dolphin striker to remove the hulls. It only looks that way.
Judging from the year of your boat the bolts are probably welded in place from electrolysis. A lot of patience and tapping is needed if this is the case.
