am also hoping that 3:1 will allow me to pull main in about another inch for going to weather better
as someone pointed out in this video from 1:35 to 1:53 the main isn't centering well even when fully pulled in with just 2:1

Car is out rather a lot, yes. You do have a split tail on the traveller sheet so you are able to center it?
Mainsheet looks like it needs much more tension and that is an easy fix
(I dont know your boat and you did not film the sails and their trim, but the sheet looks really loose).
